Getting Back to Healthy Again

Well, we are back from our fun Thanksgiving trip to Oregon.  We had a wonderful time, but it’s always so nice to be home.

Last week was such a crazy week!  Kev and I went on our little overnighter on Tuesday and then we were out of town the rest of the week.

I pretty much lived “high on the hog” (no pun intended, but wait….I think that pun is very appropriately named, lol!) all week long!  Kev’s mom made homemade bread, french toast with that homemade bread, amazing whole wheat waffles (I need to share the recipe with you guys!) and the best pie (pumpkin, apple, cherry, pecan, etc.) in the world!

Everything was amazing.

I also made the HUGE mistake of buying a giant Costco bag of assorted CHOCOLATE candy for the trip!Big bag of Chocolate candy from CostcoYa.  Dangerous.

I thought it would save us money in the long run because the kids always want to buy treats every time we stop at the gas station.  Well, I’m not sure if it ended up saving us any money, but I know it DID NOT do my body any favors.  Yikes.

It pretty much went down like this….”okay kids, you can each have two small candy bars.”  (mom secretly eats 5-6 herself.)

**one hour later**….”okay kids, you can each have one more…isn’t your mom so nice?”  (mom secretly hooked herself up to the “Chocolate Costco IV bag” and has a constant stream of them entering her body.)

It was not good.  Note to self….DO NOT under any circumstances buy a ginormous bag of chocolate anything for any reason whatsoever.

When we arrived in Oregon, I tried to give all the candy away to anyone who would eat it in an effort to save myself from utter destruction.

Ya, I definitely ate WAY too much unhealthy food, didn’t drink nearly enough water and didn’t exercise at all.  It was actually really nice.

But, it’s amazing how roly poly I feel!  It’s also amazing how much damage can be done in just a few short days.

Soooo, I’ve been eating very clean today and I can already tell a difference.  Here are some of the things I ate today…

Breakfast….1 egg + 3 egg whites scrambled with green onions, peppers, spinach, ham and topped with a little shredded cheddar.  I also had half of an apple too.  Loved it.

For lunch, I made myself a big ol’ salad with some leftover pot roast I had in the freezer.

After I made my salad, I set in on the counter next to my three year old.  He immediately scooted his chair over to my plate and said, “Ooooo, you’re eating all of my favorite foods!”

He ended up eating about half of my lunch and loved every bite…

There were olives on my salad (you can’t really see them in the picture) and he pretty much loves anything with olives on it.

Later on, I made myself a very yummy protein shake.  It included 1 cup unsweetened almond milk, 1/2 scoop chocolate Veggie protein powder, 1/3 of a frozen banana, 4 frozen strawberries, 2 big handfuls spinach, 1 tablespoon cocoa, a tablespoon of Stevia and a splash of almond extract.

It was amazing!  I’ll probably make this same shake every day this week.

Kev and I went to our fav Boot Camp class tonight and it just about killed me!  I hadn’t worked out in 6 days and it felt more like a month!  My body felt so heavy and sluggish.  We did some pushups and I thought, “how in the world did I ever do these before!??”

It was pretty pathetic.  BUT, I pushed myself hard and just about died.  One of my favorite instructors substituted the class and she is an animal.  She seriously gives a whole new meaning to the word “high impact.”

It’s really, really insane.

On the way home, I ate a Peanut Butter Dark Chocolate Kind bar and it tasted like heaven.

I was recently sent a bunch of KIND bars and KIND Peanut Butter healthy grains clusters to try out and so far I have LOVED everything!

I love KIND snacks because they’re full of good, quality ingredients and they taste like a treat!  Seriously, they taste just like yummy candy bars.

They also have so many amazing flavors like Dark Chocolate Cherry Cashew, Pomegranate Blueberry Pistachio and Almond & Apricot.  Yuuummmm!

If you’re a fan of nuts and amazingly tasty things….you will love these!

Anyway, the Peanut Butter Dark Chocolate KIND bar was the perfect thing to eat after a tough workout.  When I got home, I quickly threw together some chicken, veggies and Pot Stickers and called it dinner.

It tasted so good to me.  I can tell my body is loving all this real, nutrient dense food!  I’m hoping to get out of the “heavy, sluggish, blah” slump soon.

Well, I need to head to bed soon, but before I do, I want to share a few fun pics we took while we were in Oregon.

Kev’s parents live right across the street from this huge field with a bunch of trees.  Kev said when he was little he LOVED raking up all the leaves and playing in them.

Sooooo, we all decided we would do just that.  Kev went over with the kids (and our niece) for a while and then I joined them a little later.  Oh, Jimmer (the dog) had an absolute ball playing in the leaves as well!

It was a beautiful fall day and the perfect way to spend Thanksgiving weekend.

Well, I told you guys that Kev and I were going to eat “extra healthy” this week!  I have to say it has not been easy, but I’ve loved it!  I’ve felt really great and I’ve felt a lot leaner too.  And, I lost 3 pounds!  Woo hoo.

I’m sure most of the weight lost was water weight, but it feels good nonetheless!

The body stores glycogen in the liver to help break down carbs.  When you don’t eat a lot of carbs, the body gets rid of the unneeded glycogen (which is also attached to water), so you lose weight and feel lean pretty quickly.

However, typically all the water weight is lost within 3 days.  So, if you stick with it for more than 3 days and continue to eat a healthy diet, you will continue to lose real weight!  AND, if you cut out processed foods and sugar, you end up eating a whole lot less in general.

You don’t have to avoid all carbs either.  I just think it’s best to stay away from the refined and processed carbs.  You can get plenty of good quality carbs from fruits, veggies and whole grains like oats, quinoa and brown rice.  The body can digest these carbs a lot better and it doesn’t cause huge swings in the blood sugar, which can lead to sluggishness and overeating.

I decided to cut out all grains this week though.  I think it helps to cleanse and kick-start the body.

I actually really like tightening up the diet sometimes.  I know it’s good for my physical health, but it’s actually great for my mental and emotional health as well.  When I eat really well, I feel disciplined and very much in control of my life.  It’s empowering to me.  It makes me want to make better choices in all aspects of my life and make my life what I WANT it to be!

I told Kev that I realized when I cut out grains and sugar from my diet, I essentially cut out 90%+ of all processed foods!  Think about it….most of the processed foods out there are made from grains and/or sugar!  AND, when I’m not eating grains or sugar, I stop eating convenient, processed foods which keeps me from mindlessly snacking.  I also just eat a lot less in general.  It’s great.

Healthy food is satisfying, filling and not as easy to mindlessly snack on!  For example, I might eat a small salad or some fruit and when I’m done, I usually don’t go back for more.  I’m satisfied with a single portion.  However, when I eat crackers, chips, cereal, candy, bread, etc. I just want to eat MORE and MORE!  It tastes so good and it increases my appetite for it instead of satisfying my appetite!

Weird.

I also told Kev (poor Kev has to hear about all of my healthy thoughts and ideas ALL THE TIME!) that I wouldn’t mind eating like this permanently except I would add cheese, oatmeal, brown rice and quinoa.

Oh, one more thing.  I was very diligent on this diet most of the time, but I did snitch a little bit here and there!  But, I liked snitching a little bit.  It actually made the whole diet a lot more “liveable” and I think it helped me to stick with it.  By “snitching” I mean that I took a very small bite of a brownie one night or I stole a very small handful of Cheetos another night.  It was always very, very small portions, but they really helped me a lot.  I didn’t feel as deprived, but I still felt in control.

I told you guys that we’re going to be spending the weekend with Kev’s family, so I won’t be able to be quite as strict.  But, I plan to take a bunch of healthy snacks with me and I will still eat as well as I can.  We’ll see how it goes.

Here are a few things I’ve been eating this week…

Eggs with veggies and fruit

I had this for breakfast almost every morning and it tasted so good to me!  1 egg, 4 egg whites scrambled with spinach, peppers and onions and topped with some cheese and low-sugar ketchup.  I had it with a side of yummy fruit.  Oh, I was originally going to stay away from most dairy things, but I decided to allow myself to have some cheese too.  I just put it on my eggs, ate string cheese as a snack and put a little feta cheese on my salads.

Here’s another version of one of my breakfasts…

I didn’t have any spinach (the horror!), so I just used onions and peppers in my eggs.  I also had some cucumbers and pepper strips on the side.

I usually didn’t have an “official lunch”, I just snacked throughout the afternoon.  I had things like nuts, string cheese, fruit, veggies with hummus, deli meat, protein shakes, etc.

These are both SO GOOD!  The Toasted Coconut ones seriously taste like a treat.  They remind me of a macaroon or something.  Both of these nuts are sweetened with a little bit of sugar and stevia, but the nutrition facts are still great!

Here is a very yummy strawberry protein shake that I had yesterday.  I think I’ll make me another one today!

I just put in:  1 cup unsweetened vanilla almond milk, 1 scoop vanilla protein powder, 1+ cup frozen strawberries, 1 tablespoon stevia, a splash of vanilla extract, a sprinkle of xanthan gum and a whole heck of a lot of ice (15-18 cubes!)  This was SO SO good!  I would have added spinach too, but I was out!

On Monday night, Kev and I were invited to a fun Cafe Zupas VIP blogger event.  It was so much fun!  I just ordered a very yummy salad.  I will do a separate post all about it soon!

On Tuesday night, our family was invited to a fun “New Owner meeting and dinner” at the car dealership where we bought our van.  They served a yummy “fried chicken and all the fixins” type meal.  It was great for the kids, but I only had a side breast of chicken (no skin) and I snitched a couple bites of baked beans and a small bite of a brownie.

After the dinner, we let the kids play on the most amazing Pirate Ship ever!  It’s just on the showroom floor at the dealership.  They loved it!

When we got home, I made myself a protein shake.  Yum.  It was a fun night.

On Wednesday, we had some friends over for dinner.  We decided to make a lot of the same things we had on the 4th of July.  We made chicken and veggie kabobs,

This picture was taken before they were cooked, obviously.  I totally forgot to take a pic afterward!  We also made some quinoa and Kev and I decided to have some because it’s technically a seed, not a grain.  Yes, I found a loophole, my friends. :-)  I also made the same Red, White and Blue salad we had on the 4th and we had some grapes too.

We also made some yummy zucchini, summer squash and onions on the grill too.

We just put everything in some foil, topped it with a little olive oil and seasoned salt, folded it up and cooked it up on the grill!  It was SO GOOD and again, I forgot to take a picture of it when it was all done!  So sorry. :-(

Everything was so yummy!  I also made cookies (my favorite!) for everyone afterward, but I only stole one very small nibble.  Yay me.

For dinner last night, we just ate up all the leftovers in the house.  Pretty slick.

Here’s what I did for exercise this week.

On Monday, I missed my fav Bootcamp class because we were at the Cafe Zupas event.  However, Kev and I decided to go to the gym on our way home from Cafe Zupas.  I just did some upper body with the machines and weights and then hopped on the elliptical for about 20 minutes.

I wanted to take a picture while we were working out, but the gym was SO DANG busy!  Sooo, I decided to resort to a cheesy pic taken in the locker room…

On Tuesday night I went for a 5 mile run and it felt great!

On Wednesday I decided to skip my workout.  I didn’t want to go on a run because I had just gone the night before and I was quite sore from my workout on Monday….so I decided to take a day off.  Very nice.

Last night, I went to one of my favorite Muscle Works classes at the gym.  My instructor just about killed me! It was awesome.

This morning, I went on another 5 mile run.  I had a yummy half of a banana with some Justin’s Maple Almond butter before I left.  SO DANG GOOD!

And, would you believe that JUST AS I stepped out my front door, it started POURING rain!  Ya.  I sat there for a minute and wondered what I should do.

After I realized there was no lightening, I thought, “Well, it’s a whole heck of a lot better than the treadmill!” and I headed out the door.  The rain was coming down hard and I looked like a drowned rat, but then the rain stopped!  Then, I wished it would start to rain again!  It actually felt good. ;-)

Well, that’s my “healthy week” in a nutshell.  I loved it!  Well, I gotta go do a million and one things!  I hope you all have a fabulous weekend.  I love you all!

A Fun Run and Good Food

I went on a run outside yesterday for the first time in months!  I loved it so much.  I’ve been running a little bit on the treadmill at the gym, but for some reason I haven’t been running “for reals” in a long time.

Sooo, I ran about 4 1/2 miles with my 3 year old in the jogger.  I really don’t love running with the jogger, but I know my kiddos love it.  The weather was perfect too.

I snapped this picture just as we were leaving, but the sun was so bright I couldn’t even see the picture I was taking!  Here’s proof…

Ya, it was a little bit crazy, but we had a ball.  Btw, I only walk with my sweet doggie in the jogger, I don’t run with him.  Soooo, he is perfectly safe.  He also walked along side the jogger on his leash most of the way too.

Anyway, I loved running.  I’ve really missed it.

It is the best mental therapy ever.

Part of the reason I haven’t been running lately is because I’ve been focusing more on weights and less on cardio.  But, I’ve decided I’m not going to obsess about what kind of exercise I’m doing anymore….I’m just going to focus on exercising period.

I’m going to try to exercise 6 days a week (I pretty much already do this), but I’m just going to do the kind of exercise that “works” for that day.  Sooo, if I want to go to a class at the gym, I will do that.  If I feel like going on a run, I will do that.  If I want to do a weight room workout, I will do that.  And, if I just want to work out from home, I will do that!

And, if my day is too hectic and I just can’t fit exercise in….I just won’t do it.  Pretty simple.  I figure, as long as I’m moving and working out my body most of the time, I’m good.

Moving on….well I officially survived the first 10 days of the Jackie Warner “10 Pounds in 10 Days” diet plan.  Other than Saturday and Sunday I think I did really well.  I didn’t stick to the 950 calories every day, but I’m okay with that because I know 950 calories is extremely low.  I ate around 1100-1200 calories most days.

I only lost 3 pounds though, dang it.  My weekend really messed me up.

BUT, I also decided I’m not going to obsess about weight loss anymore.  I’m just going to commit to living healthily every single day.  There is not going to be anymore “on the wagon” or “off the wagon” days.  I’m just going to focus on eating well and eating less in general.

I am going to save a few splurges for the weekend, however.  I think allowing a few splurges here and there helps to make it a lifestyle, not a diet.

With that being said, I still like following specific diet plans occasionally.  It really helps to inspire and motivate me.  So, when/if I decide to follow a specific diet plan, I’m going to tweak it and work it into my life.  Make sense?

I know it all comes down to eating well and exercising consistently and effectively.  And, there is more than one way to skin a cat.

So, as far as Jackie Warner’s plan went, I had the same small bowl of oatmeal and an orange for breakfast every day except Sunday.  I actually really enjoyed it.  It tasted good and was pretty filling.  I also had fruit and almonds for my morning snack every day.

I had the yummy wrap for lunch most days.  I did change it up a couple of days though.  One day, I made a salad out of all of the wrap fillings and had some cottage cheese on the side (instead of the avocado) and I dipped some Kashi Pita Crisps (instead of the tortilla) into the cottage cheese.  It was yummy.

I also had a taco (in a Flatout or low carb tortilla) instead of the wrap on some of the days.

I put a little fat-free refried beans, ground turkey taco meat, lite sour cream, a little mozzarella cheese, fresh salsa and romaine lettuce in a low-carb tortilla and it was so good!

They taste yummy and are only 80 calories.  Love it.  I bought them at Wal-mart.

For some reason, I got really tired of having celery and peanut butter for my afternoon snack.  So, I had 1/2 banana with  peanut butter most days.  I had this meal before my workout sometimes and it really hit the spot.

I also changed up the dinner quite a bit.  One day I made quesadillas for the kids and I just threw some chicken and veggies in a bowl with some soy sauce for me and called it dinner!

I made tacos one night and just had leftovers a bunch of nights too.  I just focused on good nutrition and low calories for the most part.

Soooo, I’m supposed to be starting phase 2 of her diet plan today, but I’ve still been eating a lot of the phase 1 stuff today.  I’ve been trying to use up the leftovers.  Sooo, I might try some of her meal plan ideas tomorrow and I of course, will keep you all posted.
