Crazy Adventures and Still Trying to Eat Well

I’ve told you guys how hectic my life has been lately.  Geez.

I must admit it’s been really hard to eat well and exercise regularly too.

Bummer.

We’ve been so busy that I really haven’t had time to exercise much. 🙁  I know I could always wake up early and get it done, but I’ve just been too dang tired.  For example, I stayed up until 3 AM talking to my cute sissy last night.  Consequently, I’ve been seriously draggin’ today.  I loved chatting with her though and the wee hours of the morning are some of the few moments we can talk without being interrupted a million times by all the kiddos.

I’ve also been trying to eat well, but I got a little bit off track on our trip to visit Kev’s family.  It was also tough to eat well up at Girl’s Camp and now I’ve been running around with my little sis enjoying all of her (and my!) favorite restaurants and treats.  Man.

It’s okay though.  My siblings only come out once a year, so I really want to enjoy them as much as I can.  I also have big plans to eat extra healthy, exercise hard and sleep more when all of my siblings go home.

I’ve still been trying to eat EXTRA healthy when I can though.  Here are some of the things I’ve been enjoying lately:

A Fruity Spinach Chia Seed Green Smoothie!

This has been my breakfast the past couple of days.  I brought a big ol’ fruit salad up to my mom’s house the other night (I’ll talk more about that in a sec), so I decided to use up all the leftover fruit in smoothies.  I just mixed 1/2 cup Unsweetened Almond Milk, ~1 cup mixed fruit (watermelon, apple, grapes, strawberries, blueberries and bananas), a bunch of baby spinach and 1/2 Tablespoon Chia Seeds.  This smoothie has been so refreshing and it’s only about 150 calories.  Love it.

Here are some of the lunches I’ve been enjoying as well…

1 egg + 3 egg whites, scrambled and topped with a little low-sugar ketchup.  I also had half of a banana with peanut butter on the side.  Yum.

I really love to eat bananas with peanut/almond butter when I’m trying to eat well.  It’s healthy, filling and still tastes indulgent.  Love it.

Because of the pace we’ve been keeping, I’ve just been having leftovers for dinner.  Nothing too exciting.

I’ve also been taking pictures of some of our many adventures the past week.  Last week I went shopping at Gardner Village with my mom and two sisters.  We go every year when my sister comes out and we have such a wonderful time.

Gardner Village has got to be one of the cutest places in the whole wide world.  It’s basically a bunch of little historic homes that have been converted into darling boutique stores.  It’s such a fun environment and I love it so much!

Sunglasses for $10, an infinity scarf for $5.99 and a darling necklace and earrings set for $10.  Score.

After shopping, we went to dinner at Archibald’s restaurant, which is also at Gardner Village.

It’s such a yummy restaurant.  They also happen to have some of the best french fries on the planet, so I decided I needed some.  I ended up getting a fairly healthy California Wrap (sliced turkey, romaine lettuce, diced tomatoes, green onions, avocado, bleu cheese crumbles and raspberry vinaigrette dressing. Wrapped in a wheat tortilla.) with fries on the side.

On Sunday, we had a BBQ up at my parent’s house.  My mom asked me to bring fruit.  I made a fruit salad (strawberries, blueberries, bananas, grapes and apples) and brought some watermelon too.  I also wore my new necklace.  Yay.

These plates were tiny BTW, so I went back for a little more.  I also had a small brownie and some of my family’s favorite Oreo Ice Cream dessert.  It was yummy, but I should have taken a picture.

We also had fun playing cards.  Here we are playing quadruple Solitaire.  It’s one of our favorites…

My little sister, Laurie slept at my house last night (that’s why we stayed up until 3:00!)  We went shopping at some outlets near my house…

Then we came back to my house and I made homemade chocolate chip cookies at the request of my sissy.  We had a fun night.

Now I’m getting ready to head up to my parent’s house again.  We are going to watch fireworks tonight.  July 24th is Utah’s birthday so we get a second dose of fireworks.  It’s great!

Weekend Update!

First off, I’m happy to say that Kev and I got an early morning workout in this morning!  Gasp!  I know it’s hard to believe….I woke up wicked early and I did it by CHOICE! Some people from our church recently organized a Monday-Friday 5:45 AM “Insanity” workout class.  I was stoked when I first heard about it, but we hadn’t been able to go yet. Refocusing…

I’ve been wanting to hop on here and do a quick blog post for days!!!  We’ve been crazy and I’m worried that this “crazy” is the new “normal.”  Eeeek. However, the kids are back in school.  I love them very much, but…. WAHOOO! I get to have a somewhat organized and scheduled life again. Phewwww.
