Fabletics, Laughing Cow Cheese and Homemade Pita Chips

I hope you all have fun plans for this evening/weekend.  Kev and I are getting ready to head out to a movie in a little bit.  I <3 weekends so so much!

Fabletics sent me two pieces of my choice to try out and review.  I chose the Lima Capri in camouflage and the Leon Tank in black/ultra lemon.

As soon as I saw that cute camo print, I knew I wanted it!  Fabletics has several different things in camo too; sports bras, shorts and several different styles of pants.

I absolutely love the thick black band at the top and the cute detail everywhere.  They also fit perfectly!  I ordered a medium and they are fitted without being too tight or restrictive.

I love the tank too!  It’s a little bit longer length, which I LOVE!  I also ordered a medium and it’s perfectly fitted without being too tight or revealing.  I know it will be a wonderful staple in my workout wear.

I’m almost 12 weeks pregnant and am a little bit “thicker” than I usually am, but both of these pieces still fit great!

The fabric is also SO soft, well made and the perfect thickness.  It’s not too thin or not too thick and bulky either.  It’s just perfect.  I was seriously so impressed with the quality and fit of both of these pieces.

I’m thinkin’ after the baby is here, I’m going to buy a bunch more things from Fabletics.  I may use it as a motivator as I’m losing the weight afterward.  FUN!


I also want to tell you guys about a fun package I received from Laughing Cow recently.

They sent me some White Cheddar and Creamy Swiss wedges along with their Cream Cheese spread wedges in Classic Cream and the new Chive and Onion flavor.  They also sent me some bagel thins and pretzel crisps to try with the cheese.

I’m a huge fan of Laughing Cow and love to eat them with veggies and crackers or put them on my sandwiches or in my eggs.  Yum.

I also love that the light cheese wedges are only 35 calories and the cream cheese wedges are only 45!  Wow!  There is a lot of cheese stuffed in the little triangle wedge too.

Laughing Cow also sent me a $10 gift card so I could purchase my own thing(s) to pair with the cheese.  I chose to buy some fresh veggies (carrots, celery and peppers) because they are my absolute favorite thing to have with Laughing Cow wedges.  I also bought some Whole Wheat Pita Bread so I could make some yummy homemade pita chips to have with the cream cheese wedges.

I have to say veggies haven’t sounded particularly yummy to me since I’ve been so sick with this pregnancy.  BUT, if I pair them with Laughing Cow cheese they taste so good to me!  They are the perfect little snack.

I also love how portable the cheese wedges are.  Kev actually took several of them to work and enjoys them for lunch all the time.

Anyway, I thought I would tell you guys how I make my Pita Chips so you can all make them too!  They are super quick and easy to make and all my kids love them too!

Homemade Pita Chips

Homemade Pita Chips

(makes 32 chips)

  • 2 Pita Bread pockets cut into small triangles (I cut each pita bread into 16 triangles.)
  • Seasoned Salt, to taste
  • Olive Oil

Start out with a the healthy pita bread of your choice.

Wheat Pita Bread

I love this pita bread made by Papa Pita, but it’s a local company based in Utah.  I like these pitas because they taste good and all of the ingredients are real!  They do have 170 calories per pita though.  Yikes.  They are quite large though.

Using a pizza cutter, slice each pita bread into 16 small triangles.

Cut Pita Bread for chips

Arrange triangles in a single layer on a baking sheet.  Spray (or brush) with olive oil and then sprinkle liberally with seasoned salt.

Precooked Pita Chips
Broil for 3-5 minutes until lightly browned (watch closely as they can burn easily!)

Remove pan from oven.  Flip triangles over.  Spray (or brush) the other side with olive oil and then sprinkle liberally with seasoned salt.

Broil for 1-2 more minutes or until lightly browned and crisp.

Serve with you favorite dip or spread!

These chips are so so yummy!  In fact, yesterday my son had some of his buddies over and they were all hungry.  I pulled out the leftover pita chips, veggies and Laughing Cow cheese and they loved it!  It was the perfect thing for growing, starving teenage boys.

I was happy they enjoyed it so much AND it was healthy for them too!  Win, win.

I was on The Daily Dish and Good Things Utah!

As y’all know, I was on The Daily Dish and Good Things Utah yesterday!  It was such a great, albeit nerve wracking experience for me!

I stayed up late the night before making sure I had everything ready.  I had a million and one things to bring with me and I was so afraid I would forget something important.

I also hardly slept the night before.  I think I woke up every hour!  It reminded me of the night before I was induced to have two of my children.  Yes, I felt like I was going to give birth.  It was very freaky. ;-)

I woke up yesterday morning, got ready and gathered all the things I needed.  Kev snapped this pic of me (with an “I am stressing out!” look on my face) as I was “making a list and checking it twice” to make sure I had everything.


I was too worked up to eat a real breakfast, so I just grabbed a bag of almond M&Ms as we ran out the door.  I knew chocolate would make me feel better!

When we got there, I went to the kitchen and started setting up!


At this point I was pretty much running on adrenaline.  The morning news was going on in the very next room.  It was a little surreal.  I just kept reminding myself to be confident and not to worry!  Easier said than done, by the way.

The camera guys came and hooked me up with a mic.  I saw all the hosts arrive on the set, but didn’t get to actually meet them until my segment.  I must mention that the ladies on Good Things Utah are absolutely gorgeous.  TV does not do them justice!  I really think TV adds 10 pounds because they all looked super skinny and just so so gorgeous!  Nicea Degering is especially nice and Gretchen Jensen is just breathtakingly beautiful!

Anyway, I somehow got through both of my segments and managed to live to tell about it!  It was very fun, but very scary.  I dare say it might have been one of the scariest things I’ve ever done!  The whole “live TV” thing freaked me out a bit because I had no idea what they were going to ask me!

Kev forgot to take pics of my first segment, but here are a couple pics from my second segment on Good Things Utah with Ann Sterling.  She was very sweet, nice, genuine and just teeny tiny btw.



My lifelong friend Becky came to the set to watch me and of course Kev was there.  I was so glad to have both of them there.  They offered tremendous emotional support and helped me to clean things and get things ready.

Overall, I think it went well!  I was worried I would stumble over my words or just completely draw a blank!  Miraculously, I survived.  After the show, I was able to take a picture with the wonderful hosts.  They were all so so nice and asked if I would be willing to be on the show again.  I of course said yes, but I just don’t want to think about it right now!


The hosts are all dressed to the nines with perfect hair and makeup!  I feel a little bit like a frump next to them, lol!

Anyway, it was a wonderful experience for me and I’m thankful CW30 and ABC4 gave me the chance to share some recipes and my love of health and fitness!!

Easy Chicken Fajitas

Hey all. I went to a great muscle class at the gym this morning. I really love the class and I really love my instructor.

When I got home, I had my yummy “go to” chocolate protein shake again.  I also had some homemade pita chips (love them and they are super easy to make!), a pear and about 1/2 C. cottage cheese.  I was stuffed.

Later on this afternoon, I OD’ed on cereal.  I love love love cereal, but I usually avoid it because I can’t have just one bowl.  I had Special K and Cheerios, so it wasn’t too bad….but I just love them too too much!

For dinner tonight I’m attempting to recreate Cheesecake Factory’s yummy Roasted Pear and Blue Cheese Flatbread.  I’m excited.  I’ll let you know how it goes!!


A couple nights ago, I made Chicken Fajitas for dinner.  I love them and Kev loves them, but my kids weren’t huge fans.  They ate them okay, but the onions and peppers freaked them out a little.  I’ll keep making them though because they’re healthy and pretty fast and easy to make.  Anyway, here’s how I did it….

Easy Chicken Fajitas

(I doubled this recipe so I would have leftovers to freeze)

Slice chicken, peppers and onions.


If using Fajita Seasoning Mix, follow directions on package (basically cook meat, peppers and onions and then add seasoning mix and water.)

If using Mexican Fiesta Marinade, prepare marinade according to package.  I like to put mine in a big Ziploc bag.
(You can also make your own seasonings, but for simplicity I used this package this time! Love it!)


Add chicken to marinade in bag and place in fridge to marinate for at least 1/2 hour.
(I chopped all the onions and peppers and marinaded the chicken while I ran to the gym. It worked great!)


Heat oil in a large skillet or electric frying pan.  Add chicken and cook 3-5 minutes.  Add the onions and peppers and cook until chicken is cooked through (about 5-7 more minutes.)

I prepared the meat, onions and peppers before I went to the gym and then threw it all together when I got back! It made it so easy!


I covered my pan for a few minutes to let everything cook.


When everything was done, we wrapped them in warm tortillas.  I had mine in a Mission low carb whole wheat tortilla.


We added guac (Wholly Guacamole), lite sour cream, cheese and black beans to everything.  It was great.  I topped mine with cottage cheese instead of sour cream.  It was very very yummy.


Afterward, I had a TON leftovers (mainly because the kids didn’t eat as much as I thought they would!)  I didn’t mind though, I just froze it all in individual portions in freezer bags.  I figured we could use it to top salads, on it’s own, or in a wrap!  Yum!
