A Fun Memorial Day Weekend + Crazy Life

I have been a VERY busy, busy girl!

We had a wonderful Memorial Day weekend with Kev’s family up in Oregon.  I actually enjoy the 6 hour drive up there.  It’s nice to “unplug” from the world for a bit and just get away with some of my favorite people for a while.

I also loaded us up with a bunch of healthy snacks for the drive…

I packed some Skinny Pop popcorn, grapes, string cheese, strawberries, carrot sticks, yogurt, Babybel cheese, fruit leather and nuts.  Everything tasted great!

I also decided to make a couple homemade treats for the drive too…

I made our favorite Chocolate Chip Cookies and decided to try a new recipe for Peanut Butter Bars.  The bars were pretty good and tasted a lot like Reese’s Peanut Butter cups.  Yum.

The kids always want to buy candy and treats every time we stop for gas, so I decided to bring the homemade treats instead.  I think homemade treats are A LOT better than candy and it saves a bunch of money too.  Yay!

Nobody complained about it either.  Woo hoo.

I just have to say that Kev’s parent’s house is thee perfect “Grandparent House.”  Seriously.

Kev’s mom is an AMAZING cook and she fed us lots of homemade bread, french toast (with the homemade bread!), whole wheat waffles (the best ever!), homemade jam, homemade pie, etc. etc. etc.

Yes, she’s pretty amazing.  The kids also enjoyed playing games with their grandma…

We also had a BBQ at Kev’s brother’s house on Saturday.

Yuuu….uuuummm!

We had a wonderful weekend and even though there was always lots of incredible food around, I tried to exercise some self restraint too.  I pretty much just tried “a little bit of everything” all weekend long, but didn’t pig out on anything.

I think I did okay.

However, for some reason my body decided to blow up like a giant marshmallow!  It was pretty crazy.  I think the long car ride, excess heat and indulgent food might have had something to do with it.

When we got home last night, my legs and feet were SO HUGE!  I plopped down on my bed and propped my feet up for a while and it felt heavenly.

I even took a picture because I’m sure you all love seeing pictures of feet, especially bloated pregnant feet. 🙂

Yikes.  That is so not cute and I totally have cankles.

We had a fun trip, but it’s always good to come home too.

I had a CRAZY day today though!  I spent my morning and part of my afternoon at the zoo with my son’s Kindergarten class.  It was fun, but super hot (90 degrees!)

I made myself some Oats in a Jar as I ran out the door this morning…

I made my Chocolate Chip Cookie oats version and it totally hit the spot!

We had lunch at the zoo (peanut butter and jelly sandwiches, grapes and string cheese) and it was awesome too.

Later on, I made my kids French Toast for dinner with some of the homemade bread Kev’s mom sent us home with.  I made myself some scrambled eggs and snagged one small piece of french toast (topped with sugar free syrup) as I ran out the door to head to the gym.

I went to a wonderful Muscle Works class that I loved so much!  After a long, hot, tiring day I REALLY didn’t feel like going to the gym…at all.  But, I was so glad I got ‘er done anyway.

Oh, and yes, I totally sported a t-shirt at the gym tonight.  I decided my bloated marshmallow body didn’t need to be poured into a tank top.  I felt like a frump, but I didn’t care.  I got my workout in and headed home.  Check.

When I got home, I made myself a Peanut Butter banana Protein Shake and put my feet up on the couch.  It was so nice to chill for a bit…

Now, I need to get my bum into bed.  I am a very tired lady.

I’m happy that I don’t have a whole lot going on tomorrow.  I’m hoping to catch up with laundry and the rest of my life!
