I have a very yummy recipe to share with you today! The other day I was really craving protein pancakes. I was getting very tired of avoiding grains. 🙁 After feeling sorry for myself for a little while, I realized I could probably make protein pancakes with almond or coconut flour! 🙂 I searched all over the internet and found a bunch of recipes, however, I never found the perfect recipe. I wanted one that included a good amount of protein and one that didn’t include unnecessary calories. I also thought it would be fun to add chia seeds. So, Continue Reading…

Healthy New Year’s Goals Week #1
Happy Monday! First off, I’m having a bit of a tough time blogging today because of this dang cute kid… What a cutie patootie. He keeps bringing me his Jessie doll saying things like, “Mom, you be Jessie.” and “Play with me.” How cute it that!? So, I’ve been taking a few “Jessie breaks.” What a sweet pea. I just love him so much!! Anyway, I thought I would check in to let you all know how my New Year’s goals went this past week… I officially give myself a B+ for effort and a D for results! 🙁 I Continue Reading…
I Started the Oxygen Challenge 3!
Well, I started the Oxygen Magazine Challenge this week and I’m lovin’ it! It’s basically just a 90 day health and fitness challenge that includes meal plans, recipes and workouts. It’s awesome. Oh, and there’s also an Oxygen Magazine cover model challenge! Woot! Apparently, at the end of the challenge, readers and Oxygen Magazine employee people vote on who should be on the cover of the magazine. I’m not thinkin’ I’ll win that 😉 , but it helps to keep me motivated nonetheless! In order to officially enter the “cover model contest,” I had to take and submit a before Continue Reading…
Getting Ready to Run + Finding a Healthy Balance
Well folks, my life is nuts this week! It’s the last week of school, which I think is mostly awesome. I’m very grateful summer is here and I’m more than ready for the relaxed schedule, but I’m a little nervous for all of the inevitable chaos that’s about to be heaped upon us! Auuugh. I’ve also been busy getting ready for our upcoming relay race this weekend. I’m excited, but a little nervous! I’ve mentioned this before, but my first leg of this race is my longest. I’m happy about that. It’s over 10 miles though, which is loooooong. I Continue Reading…
Things I Eat Most of the Time!
K, so I took some of the kiddos over to the park today to fly a kite and play on the playground. We had a lot of fun and the weather was perfect! It’s actually really hard to take a picture of a kite being flown + the person flying it, so I did it in two parts… There ya go. My oldest son has always loved kites. Today was the perfect kite flying weather too! I really love spring weather in Utah. It’s usually the perfect temps (~65-80 degrees) and we get cool rain storms, hail storms, rainbows and Continue Reading…
